Arugula Salad Recipe

This easy vegetarian lunch might not suit everyone’s taste, as arugula is slightly spicy, but it is a refreshing change from the everyday.

Servings: 4 servings

Prep time: 2 minutes

Cook time: 5 minutes

Total Time: 10 minutes


2 bunches arugula

6  tablespoons vinaigrette dressing

Salt to taste

Pepper to taste

¼ c parmesan cheese, thinly sliced or coarsely grated

¼ c toasted pine nuts




  1. Wash and thoroughly dry arugula, then place in bowl
  2. Toss ingredients in bowl – with vinaigrette, salt and pepper. Transfer to a salad bowl
  3. Toss the pine nuts with a small amount of oil and toast in a frying pan over medium heat, stirring constantly, until golden brown.
  4. Top salad with cheese and nuts
