This easy vegetarian lunch might not suit everyone’s taste, as arugula is slightly spicy, but it is a refreshing change from the everyday.

2 bunches arugula
6 tablespoons vinaigrette dressing
Salt to taste
Pepper to taste
¼ c parmesan cheese, thinly sliced or coarsely grated
¼ c toasted pine nuts
- Wash and thoroughly dry arugula, then place in bowl
- Toss ingredients in bowl – with vinaigrette, salt and pepper. Transfer to a salad bowl
- Toss the pine nuts with a small amount of oil and toast in a frying pan over medium heat, stirring constantly, until golden brown.
- Top salad with cheese and nuts
